Smoked Chicken Breast
Summer barbecue season is here! Roasted chicken is great, grilled chicken is just fine, but smoked chicken breast is a whole new level of delicious. Boneless chicken breasts are simple to prepare for a week's worth of meal prep, and cook up quick inside a charcoal smoker.
Servings 4 servings
- 4 boneless, skinless, chicken breasts
- 1 tablespoons olive oil
- 1 tablespoon BBQ rub
First, rub the chicken breasts with the oil and then sprinkle on the BBQ rub making sure to coat well.
Then, set smoker up with coals and wood chips.
Once the smoker is at temperature (200-225) place the chicken onto the grate and place the lid back on.
Smoke for about 75 minutes and then check the internal temperature in the thickest part of the breast.
If it reads 165 degrees pull the chicken and let rest for about 10 minutes before slicing.
