Cauliflower Mashed Potatoes Recipe

A big bowl of Cauliflower Mashed Potatoes is almost better than the real thing; in fact, it might be the greatest all-vegetable comfort food in the world.

  • 3 pounds cauliflower about two medium heads, cut into florets
  • 3 cups water
  • 6 tablespoons butter cut into 1/2" cubes
  • 1 tablespoon fresh thyme finely chopped (or 2 teaspoons dried thyme)
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper


  • Place cauliflower florets in a large pan or pot. Add water and bring to a simmer.
  • Cover and cook until easily pierced with a sharp knife, about 15 minutes.
  • Drain any leftover water and mash the cauliflower until it's fairly smooth. Add the butter, thyme, salt, and pepper and cover until the butter has melted, 5 minutes.
  • Stir until all the ingredients are well combined. Taste and adjust seasoning if desired.
