Cauliflower Mashed Potatoes Recipe
A big bowl of Cauliflower Mashed Potatoes is almost better than the real thing; in fact, it might be the greatest all-vegetable comfort food in the world.
- 3 pounds cauliflower about two medium heads, cut into florets
- 3 cups water
- 6 tablespoons butter cut into 1/2" cubes
- 1 tablespoon fresh thyme finely chopped (or 2 teaspoons dried thyme)
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon freshly ground black pepper
Place cauliflower florets in a large pan or pot. Add water and bring to a simmer.
Cover and cook until easily pierced with a sharp knife, about 15 minutes.
Drain any leftover water and mash the cauliflower until it's fairly smooth. Add the butter, thyme, salt, and pepper and cover until the butter has melted, 5 minutes.
Stir until all the ingredients are well combined. Taste and adjust seasoning if desired.
