Homemade French Onion Dip will drag you away from those overly salty, processed onion soup packets forever! Imagine the deep flavor of caramelized onions of French Onion Soup, then add cream cheese, sour cream, and mayo. All good things! It takes a little time to caramelize onions, but your patience will be rewarded.
Cut the onions in half and then slice them into 1/8-inch thick half-rounds. (You will have about 3 cups of onions).
In a large saute pan over medium heat, melt butter. Add oil, onions, and cayenne and cook for 10 minutes, until the onions are soft.
Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized. Transfer to a baking sheet and cool.
In a food processor, add cooled onions, cream cheese, sour cream, and mayonnaise. Pulse until combined. Season to taste with salt and pepper. Garnish with fresh chives and serve with homemade potato chips.
