Fill a chilled wine glass halfway with ice. Add sparkling wine and Aperol.
Top with seltzer water. Using a bar spoon, gently pull up and stir wine mixture to top to combine. Top with additional ice and garnish with orange peel or two green olives.

Aperol: A bright orange, bitter Italian liqueur with a low (11%) alcohol content with notes of orange peel and herbs.

Glassware: The Aperol Spritz is traditionally made in a stemmed wine glass. For a more modern look, choose an angled wine glass.
Big batch: To make a batch of 8 cocktails, combine 24 ounces (3 cups) Prosecco, 16 ounces (2 cups) Aperol, and 8 ounces (1 cup) soda water in a pitcher. Have ice, glassware, and garnishes on hand so guests can help themselves.
