Aperol Spritz

The classic Aperol Spritz is a refreshing aperitif cocktail that combines bright orange Aperol liqueur and dry sparkling wine.

Ingredients

  • 3 ounces dry sparkling wine such as Cava or Prosecco (1/4 cup plus 2 tablespoons)
  • 2 ounces Aperol (1/4 cup, see note 1)
  • 1 ounce soda water or club soda (2 tablespoons)
  • 1 strip orange peel or two green olives, for garnish

Instructions

  • Fill a chilled wine glass halfway with ice. Add sparkling wine and Aperol.
  • Top with seltzer water. Using a bar spoon, gently pull up and stir wine mixture to top to combine. Top with additional ice and garnish with orange peel or two green olives.

Notes

  1. Aperol: A bright orange, bitter Italian liqueur with a low (11%) alcohol content with notes of orange peel and herbs.
  2. Yield: This recipe makes 1 cocktail.
  3. Glassware: The Aperol Spritz is traditionally made in a stemmed wine glass. For a more modern look, choose an angled wine glass.
  4. Big batch: To make a batch of 8 cocktails, combine 24 ounces (3 cups) Prosecco, 16 ounces (2 cups) Aperol, and 8 ounces (1 cup) soda water in a pitcher. Have ice, glassware, and garnishes on hand so guests can help themselves.
  5. Spritz Veneziano: A group of wine-based aperitif cocktails made with prosecco, digestive bitters, and soda water, of which the Aperol Spritz is one. Other Spritz Veneziano cocktails feature Campari or Select liqueurs.
