One bite of Cauliflower Roasted with Parmesan cheese will make you fall in love with this unassuming but mighty vegetable, even if you’ve spent a lifetime giving cauliflower the cold shoulder.

Ingredients

  • 1 large head cauliflower (about 2 pounds)
  • 3 tablespoons olive oil
  • 1 cup Parmesan cheese freshly grated
  • 1 cup Gruyère cheese freshly grated
  • Salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 425 degrees. 

  2. Remove the outer green leaves from the cauliflower and cut the head into florets, discarding the stems. Arrange the florets in a singler layer on a sheet pan. Drizzle with olive oil and sprinkle generously with salt and pepper. Toss well. 

  3. Bake for 20 to 25 minutes, tossing once, until the cauliflower is tender and starts to brown.

  4. Sprinkle with cheese and bake for 1  to 2 minutes more until the cheese melts. Season to taste and serve hot or warm.
