Easy Lemon 7-Up Cake!

This easy, lemony 7UP Pound Cake is moist, delicious, and tastes just like the soda! And it's MADE with 7UP, too! A party and potluck favorite.

Ingredients

Box Cake Mix Method Ingredients

  • 1 box yellow cake mix
  • 4 eggs
  • 3/4 cup vegetable oil
  • 1 (3.4 ounce) box instant lemon pudding
  • 3/4 cup 7UP or any lemon-lime soda

Scratch Cake Method Ingredients

  • 5 eggs
  • 3 cups self rising flour
  • 3 sticks butter softened
  • 3 cups sugar
  • 2 tablespoons lemon juice
  • 3/4 cup 7UP or any lemon-lime soda

Lemon Glaze Ingredients:

  • 2 cups powdered sugar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice

Instructions

To Make the Cake from Box Cake Mix:

  • Preheat oven to 325 degrees. Grease a 12-cup Bundt pan with butter.
  • In a large bowl combine the yellow cake mix, eggs, vegetable oil, lemon pudding mix, and 7UP. Mix well until all ingredients are combined. 
  • Pour the batter into prepared pan and bake for 45 to 55 minutes, or until the cake is set.
  • Remove from the oven and cool on a wire rack. Once cool, remove from the pan and drizzle with the Lemon Glaze. Serve!

To Make the Cake from Scratch:

  • Preheat oven to 325 degrees. Grease a 12-cup Bundt pan with butter.
  • In a stand up mixer, mix together butter and sugar on medium speed, about 10 minutes. Add eggs to the mixture one at a time, beating after each is added in.
  • Mix in flour and lemon juice. Remove the bowl from the mixer. Fold in the 7UP. Pour mixture into prepared pan. Bake for 60 to 75 minutes, or until the cake is fully set.
  • Remove from the oven and cool on a wire rack. Once cool, remove from the pan and drizzle with the Lemon Glaze. Serve!

To Make the Lemon Glaze

  • In a medium bowl, mix the powdered sugar, lemon juice, and lime juice together. Drizzle on the cooled cake.

Notes

If using the from-scratch method, each slice (assuming 12 slices per cake) is 576 calories.
