In my family, Thanksgiving is all about traditions. I can’t wait for my mom’s turkey, or my grandma’s crescent rolls. After dinner, there’s somehow enough room for my sister’s amazing pumpkin pie (and my brother’s apple pie). Looking back, there is so much comfort in predictability and being surrounded by family.

But this year, all around the world, everything is different. I won’t be going home for the holidays, and you might not be, either. But no matter what your Thanksgiving in 2020 looks like, when it comes to the feast, I’m here to hold your hand.

Sidesgiving

Maybe you never really cared about the turkey anyway, so this year you are leaning into the side dishes in a big way. At Culinary Hill, we call that “Sidesgiving.” No point in stressing about a turkey if it doesn’t bring you joy! Focus on the things that do, like Velveeta veggie casserole, mac and cheese, and mashed potatoes.

Speaking of spuds, we have lots of choices such as the classic mashed potatoes, garlic mashed potatoes, Boursin mashed potatoes, mashed sweet potatoes, and even cauliflower mashed potatoes (which don’t contain any potato, by the way). We also have several options for green beans (roasted, blanched, casseroled) and so many other vegetable recipes.

You’ll also find cranberry sauce, applesauce, and cranberry sauce with apples. I always make the latter because the sweet of the apples with the sour of the cranberries is just perfect to me.

And don’t forget the stuffing! Our classic bread stuffing is one of the most popular recipes on the blog. And, we recently added a new rice stuffing recipe. It’s not typical, but it’s absolutely delicious. If you can’t take any risks on Thanksgiving (I don’t blame you one bit), flag it for a future weeknight side dish. I highly recommend it.

I never jumped on the Sourdough Train of 2020, but I do love making bread. My recipe of choice is Grandma’s homemade crescent rolls, and they are an absolute requirement for our Thanksgiving table.

Making bread means working with your hands, and for me, that’s fun, relaxing, and maybe a little bit therapeutic. Maybe I can’t control what’s happening outside my own front door, but I can control this ball of dough right here in front of me.

There is also no shame in buying bread either, whether it’s a bag of brioche rolls or a can of exploding biscuits from the refrigerator. It’s Thanksgiving in 2020, so make the things you want to make and buy the rest.

I’ve created make-ahead versions of some of the most popular Thanksgiving recipes so you can make them when you want and stick them in the freezer and worry about something else. Some recipes have tricks to make them freezer-friendly (egg whites in your mashed potatoes, gelatin in your pumpkin pie?) while others are just naturally that way (cranberry sauce).

I’ve found some comfort (and stress-relief) in the very act of baking itself. There’s something about reading a recipe, measuring ingredients, and having everything turn out exactly the way it’s supposed to, for once, that is very reassuring.

If that’s why you’re here, then allow me to share with you some of my favorite, tried-and-true recipes. Many of them are passed down from my family, tested by generations of cooks over the decades. Pumpkin bars slathered with cream cheese frosting are useful for wrangling a bunch of antsy house-bound kids, while bread pudding might be the perfect cozy quarantine birthday drop-off for a dear friend.

And for the big day, of course, you’ll need pumpkin pie, pecan pie, or apple pie. If you want to go all-in, you can even make your own pumpkin puree.
