Strawberry Shortcake with Mascarpone Cream

When strawberries are in season, there is nothing I love more than making Strawberry Shortcake. With loads of Wisconsin cheese at my disposal, too, I can really upgrade this classic dessert to something special.

First, the biscuits.

I added shredded Wisconsin Colby cheese to my easy 3-ingredient biscuit recipe. The biscuits bake up light, fluffy, and with enough cheese that you can SEE IT. Devour them as is, or keep going to the shortcake!

Next, the berries.

Loads of strawberries are essential (I prefer to quarter them instead of slicing them), and of course sugar and lemon juice. I also added fresh basil which really makes the Strawberry Shortcake pop. Eat these right out of the bowl, or keep building your shortcake!

Last, the cream.

I started with Wisconsin mascarpone cheese and whipped it with heavy cream, vanilla, and a touch of powdered sugar. You will love how rich and luxurious this cream is! You’ll want to eat it straight out of the mixer, but hold back. Make your shortcake!

Two savory ingredients (the cheese and basil) make this dessert a wonder of summer and the best thing to happen to cheese since sliced bread!

Strawberry Shortcake with Mascarpone Cream

Strawberry Shortcake with Colby cheese biscuits, mascarpone cream, and basil in the berries! This updated classic is perfect for summer.

Ingredients

For the strawberries:

  • 1 pound strawberries hulled and quartered
  • 1/4 cup sugar
  • 1 tablespoon fresh basil finely sliced, plus more for garnish
  • Juice from 1 lemon

For the biscuits:

Instructions

  1. Combine the strawberries, sugar, fresh basil, and lemon juice in a large bowl. Cover and chill while making the biscuits (or overnight).

  2. Preheat oven to 450 degrees. Line a baking sheet with parchment paper or a silicone mat.

  3. In a large bowl, combine flour and butter. Using a pastry cutter, a fork, or 2 knives, cut in butter until a coarse meal develops and butter is evenly distributed. Add Colby cheese and toss to combine.

  4. Add milk and stir until a soft dough forms. If the dough is sticky, add more flour 1 tablespoon at a time.Turn the dough out on to a lightly floured surface and knead for 20 seconds, adding flour if the dough becomes sticky.

  5. Roll out to 1/2-inch thick and cut out biscuits with a 3-inch biscuit cutter. Press together uncut dough and continue rolling and cutting biscuits. Bake until lightly golden brown on top and fragrant, about 10 to 12 minutes.

  6. Meanwhile, in a stand up mixer with the whip attachment, whip the Wisconsin mascarpone cheese, heavy cream, powdered sugar and vanilla until light and airy.

  7. Cut a biscuit in half and place the bottom half on a plate. Top with a generous spoon of the Mascarpone cream and several strawberries. Place the top half of the biscuit on top, and top with another generous spoon of Mascarpone cream and several strawberries. Garnish with fresh basil.
