I have always been a fan of a good ol’ PB&J sandwich.

This childhood lunch option always reminds me of dessert since peanut butter and jelly are both quite sweet. But then things got crazy, and now PB&J is officially in the dessert category.

Peanut Butter and Jelly Bars have a peanut butter cookie crust topped with strawberry jam and crunchy peanuts. Kids and adults alike will gobble these up!

Start with a soft, peanut butter cookie crust. Smother it with your favorite flavor of fruity jam (strawberry all the way for me, please!). Then, top with salty, crunchy peanuts and kids and adults alike will be scrambling for seconds.

I love the strawberry jam here, but raspberry jam or apricot jam would also be delicious. I haven’t tried an almond butter version yet, but it seems like an obvious next step!

Peanut Butter and Jelly Bars

Yield: 24 servings

Peanut Butter and Jelly Bars are a fun, whimsical dessert sure to delight kids of all ages. Customize with your favorite flavor of jam!

Ingredients:

  • 1 cup unsalted butter, softened (2 sticks)
  • 1 ½ cups sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 (18 ounce) container creamy peanut butter
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 ½ teaspoon salt
  • 1 (18 ounce) container strawberry jam or other jam
  • 2/3 cup chopped nuts

Directions:

  1. Preheat oven to 350°F. Grease and flour a 9” x 13” pan.
  2. Cream together butter and sugar until fluffy (use a standing mixer if desired). Add vanilla, eggs, and peanut butter and stir until well-combined.
  3. In a separate bowl, combine flour, baking powder, and salt. Add flour mixture to peanut butter mixture in batches, stirring after each addition.
  4. Pour 2/3 batter into pan. Spread evenly with a spatula. Pour jam on top and spread evenly over batter.
  5. Drop remaining batter in pieces onto the jelly layer. Sprinkle with nuts. Bake 45 minutes or until golden brown.
  6. Cool completely and cut into squares.

    • Michal, I’m SO SORRY for listing the ingredients as 2 butter sticks… that’s a terrible measurement. I’m going to fix the recipe immediately. 1 stick or 1/2 cup butter is equal to 4 ounces, or 113 grams. So 226 grams butter is what you need here. I’m sorry again for that, I’ve been trying to correct recipes where I list the ingredients in “sticks” which is the most worthless idea ever. But clearly missed this one. :D

    These sound like my idea of heaven. Not many people over here appreciate the peanut butter and jelly thing, but I caught onto the idea years ago and can’t get enough of that gorgeous combo.

    I’m thinking this could be one for the hospital bag!!!
