I love eating oatmeal for breakfast.

It’s easy to prepare yet incredibly filling.  Eat one serving of oatmeal, and you’ll probably be stuffed until lunch time.

Triple Berry Gluten Free Oatmeal is ready in 5 minutes and the perfect start to any day. The chewy oats and fresh berries will keep you full until lunch!

There are so many options for stir-in,s too: Fresh fruit, dried fruit, nuts, maple syrup, brown sugar, milk, or butter.

In this version, I used three types of fresh berries and almond milk.  On a cold day, these oats will warm your insides while the fresh berries remind you of summer.

My favorite oats are the gluten-free variety from Trader Joe’s.  I have no reason to avoid gluten, but I just prefer the chewy texture and that they don’t get mushy.  Steel-cut oats are great too.

For milk, I favor unsweetened vanilla almond milk.  The vanilla flavor adds another dimension to the oatmeal as well as a hint of sweetness that removes the need for added sugar.

Any combination of fruits, nuts, and other toppings is great for oatmeal.  I recently picked up strawberries, blueberries, and blackberries at my local farmer’s market because they looked so fresh and juicy.  Farmer’s market berries always taste better than what you get at a store.  They make any bowl of oatmeal just that more special.

Triple Berry Oatmeal for One

Yield: 1 serving

Triple Berry Oatmeal for One is ready in 5 minutes and the perfect start to any day. The chewy oats and fresh berries will keep you full until lunch!

Ingredients:

  • 1 c. water
  • ½ c. gluten-free rolled oats
  • 1/8 tsp. salt
  • 1-2 T. unsweetened vanilla almond milk or other milk
  • ½ c. strawberries, chopped
  • ¼ c. blackberries
  • ¼ c. blueberries

Directions:

  1. Combine water, oats, and salt, and in a deep bowl. Microwave on high for 2 minutes. Stir and microwave and additional 30 seconds.
  2. Stir in milk; cover, and let stand for 2 minutes.
  3. Meanwhile, spread half of the berries in the bottom of a bowl. Top with oatmeal and remaining berries. Serve hot.

    • Hi Risa, would you believe that bowl was ninety-five cents at Crate & Barrel right around the holidays? And the spoon is from there too. I think they always have those spoons in stock (condiments spoons) and they too are right around $1. Or possibly fifty-cents each, I can’t remember. Cheap food props!
