But I’ve never heard anyone wandering around wondering how Chipotle makes their grilled peppers and onions.
Perhaps everyone already knows how to make these super easy strips of fajita veggie wonderment! After all, it only takes 5 ingredients.
Slice up green bell peppers and red onions. Saute with oil (Chipotle uses rice bran oil, but you can use olive or vegetable or grape seed or coconut or peanut) and toss with finely chopped fresh oregano. Yes, that’s it. In a pinch, substitute dried oregano for the fresh. It will still be delicious.
You probably already know how to cut bell peppers, but just in case you want to see how other people do it, here’s my process. I slice off the top and bottom, cut the pepper in half, seed it, then cut it into neat little strips.
I find this very therapeutic.
