I did it for the same reason I do everything around here: Because it tastes good.

Brussels Sprouts cooked in bacon grease, seasoned with garlic and apple cider vinegar, finished with butter. Throw that on a pizza with too much Swiss cheese, BACON, and chopped almonds.

Yep, it tastes pretty fantastic.

The first time I made this Flatbread Pizza was for Friendsgiving, and everyone LOVED it! It’s not the same as eating a greasy slice of Pizza Hut or anything like that, but it’s really good. If you’re trying to eat more vegetables, this is one small step towards that.

This easy Lamb Bourguignon recipe is the BEST way to cook lamb shoulder. Braise it low and slow in the oven with vegetables, herbs, and plenty of red wine!

I like to buy bags of shredded Brussels sprouts, but you can buy them whole and shred or slice them yourself. Whatever makes you happy!

And I know I sound like a broken record over here, but everything is better with bacon. And cheese.

Brussels Sprouts and Bacon Flatbread Pizza

Yield: 8 servings (1/2 pizza each)

Ingredients:

  • 4 Flatout Artisan Pizza Crusts or other flatbread
  • 8 ounces bacon
  • 8 ounces shredded Brussels sprouts
  • 1 clove garlic, minced
  • 1 teaspoon cider vinegar
  • 1 tablespoon butter
  • 2 cups shredded Swiss cheese
  • 1/4 cup chopped roasted almonds

Directions:

  1. Preheat oven to 375 degrees.
  2. In large skillet over medium heat, sauté bacon until crispy, about 5 minutes. Transfer to paper towels, reserving 1 tablespoon bacon grease. Chop bacon.
  3. Add sprouts to reserved bacon grease and cook until softened, about 3 to 5 minutes. Stir in garlic and vinegar until fragrant, about 30 seconds. Remove from heat and stir in butter.
  4. Pre-bake Flatout pizza crusts for 2 minutes (omit for standard flatbread) and remove from oven.
  5. Top each crust with 1/2 cup Swiss cheese, 1/4 of the Brussels sprouts, 1/4 of the bacon, and 1 tablespoon of almonds. Return to oven and bake 4 to 5 minutes longer, until cheese is hot and melted. Slice and serve.
